There has been some talk in the family (and on this blog) about beets.
Emily called me last night and asked me how I prepare beets. I have a simple method. I just boil and boil them until they are tender and then slip the skins off under cold water. It works well. I sometimes squeeze a little lime or lemon juice on them with a little salt. Most of the time we just eat them plain-- we eat most of our veggies with very little embellishment. I find that good, local produce speaks for itself.
But, I was looking at blogs this morning and found this. I think I might try it.
